There’s really nothing to hate and everything to love about these miniature cheesecakes. I originally found this recipe from Chew Out Loud and wanted to try it out for a little Valentine’s Day treat!
These white chocolate raspberry cheesecake bites are a simple dessert packed with layers of decadent flavor, topped with your labor of love. The white chocolate is a sophisticated addition to the cream cheese custard layer. You’ll also be stirring up a homemade raspberry sauce on the stove. This is what creates that whimsical swirl in each bite!
Cream cheese with raspberry is a classic combination for any fruity dessert lover. But chocolate lovers, worry not! This dessert has you covered too. You’ll get that creamy, subtle white chocolate flavor in the cheesecake, and you’ll also get a rich, crunchy Oreo cookie crust.

I usually spell out every detail of the recipe, but this one has a lot of components, so I’m going to toss it straight over to Chew Out Loud. This recipe is pretty spot-on. However, I will say that it took me longer to prepare the ingredients than the allotted time listed.
Tips When Recreating the Recipe
- Allow yourself more time for preparations. The recipe calls for 30 minutes prep and 20 minutes bake time. I ended up spending around an hour and a half for the whole process.
- You can make the raspberry sauce ahead of time and keep it in the fridge until you’re ready to make them (time saver!).
- You can prepare the crust ahead of time by crushing up your Oreos beforehand and storing them until you’re ready. I used a blender to crush them up and it was so fast and easy! The recipe uses about 1 1/2 cups of crushed Oreos and I found this rounds out at 1 and a half rows of Oreos from the regular-sized package.
- Make sure your cream cheese is softened to room temperature before starting.
- Bake them on a lower rack in the oven. This will help the butter to cook through the Oreos for a crisp crust while keeping the tops of the cheesecakes from burning.
